Sometimes in the bottom of a menu in a restaurant, you see a statement by the chef, and it says, we gleefully accept no substitutions on our menu, meaning that they don't want you to say, hey, can you substitute this for this? It's a policy, and you have to abide by it. So this question about the strange substitutions we make is really relegated to places that don't get huffy about it
