Caviar today 🐟

Hi, Simon. I never thought I would know this much about caviar and Sturgeon. So thank you. First of all, I always think it's so interesting to learn how certain foods cross cultures and become popular around the world. And so it was really interesting to see how the industry developed and how caviar became a popular treat in some ways. Or I guess not treat since you mentioned how soldiers who were Senate didn't necessarily love it

As I explained in the podcast, in terms of why I like it and why it tastes, it is definitely in a quiet taste. It's salty. It's got a little pop. I always try and explain it to people as like salty pop rocks, if you remember those from back in the 70s. But once you get that taste, it's full of, umami. It's full of salt. It's full of sort of almost like eating a little bit of parmesan
